With larger northerns over about 5 pounds I like to remove the large chunk of flesh inside each side of the lower jaw. It's easy to do and no sewing or gluing is required if it is done correctly. First I make an incision with a scalpel on the edge of the jaw bone on each side right where the bone meets the fleshy portion. Then I loosen the piece of flesh with a fish skinning knife. Here I've use a small scraping tool (junior fish flesher from Dan Chase Supply). I've laid out the flesh removed to show how much there is. In this photo I've opened the jaw as it would be in a mounted postion, to show opening the mouth naturally closes the incision made. It will dry closed and no sewing, filling, or gluing is required.
